Three cheers for pancakes! I love pancakes. And I love pumpkin. And I love that I can have both on the 21 Day Fix. These 21 Day Fix Pumpkin Spice protein pancakes are soft, fluffy, chewy little cakes of pumpkin-y deliciousness that the whole family will love.

But real quick. Have you ever played the game Scattergories? In this game, you get a list of topics and then a letter – you have to name an item for each topic on the list that starts with the assigned letter. One time, many years ago (like 15, at least) we were playing a very heated game of Scattergories with the family.
The topic was “something soft” and the letter was “p”. My dear husband, Charles, wrote down “pancakes” for his answer.
My sister and I fought to the death on this one and said that CHARLES YOU ARE WRONG, PANCAKES ARE NOT SOFT. We did not let him have the point. For years (years!), this was brought up at every family gathering and every time we had pancakes. I still stood by my decision, although on the inside I had conceded that pancakes were, indeed, soft. But I never admitted this!
Just a few months ago, we got some pancakes at a restaurant and I slipped. I took a bite and said, “ooooh these are so soft and fluffy!” and then I had to admit I was wrong. The worst! But all is well that ends well, and I can now call pancakes soft out loud again.
So on to those pancakes.
These pumpkin spice pancakes are also packed with protein.
I use my favorite pancake mix – Kodiak Cakes Power Cakes Mix (you can get it at most grocery stores or order from Amazon, but we like to buy the big box from Costco).
If you don’t have Kodiak Cakes you can use any protein pancake mix (Krusteaz is another brand), or any whole wheat pancake mix – you just won’t get the protein that you would with the Kodiak Cakes and you’ll want to change your container counts and points accordingly.
These pumpkin pancakes freeze well and make great leftovers, too.
If you’ve never frozen pancakes before, here’s the best way!

Cook time: 10 minutes
Serves: 4 (2 pancakes each)
Ingredients:
- 6 large eggs
- 2/3 cup pumpkin puree
- 2 tablespoons honey
- 1 cup Kodiak Cakes Power Cakes (or whole wheat pancake mix)
- 1 1/2 teaspoon baking powder
- 1 tablespoon pumpkin pie spice
- 1/8 teaspoon salt
Directions:
In a large mixing bowl, whisk the eggs, pumpkin puree, and honey until thoroughly combined.
In a separate bowl, combine the Kodiak cakes mix, baking powder, pumpkin pie spice, and salt.
Add the dry ingredients to the egg mixture and gently fold the two together until blended.
Heat your pan over medium heat. Spray a nonstick pan lightly with a nonstick cooking spray. Spoon 1/4 cup of the batter into the pan for each pancake. Spread lightly with the back of the spoon if necessary. Flip when lightly browned, about2-3 minutes.
Repeat the process with the remaining batter. Serve warm with butter and maple syrup if desired.

Serving size is a 2 pancakes. Don't forget to include any teaspoons for butter or maple syrup that you add!

- 1.25 red
- .25 purple (that’s rounded up)
- 1.5 teaspoons
