Yielding pancakes for a crowd will have you chained to your stove while saidcrowd is having fun, socializing, and making memories without you. (Which would be good for you to have that servant’s heart, but your loved ones want you with them too.) Sometimes I make and freeze pancakes in advance, then thaw them and pull this breakfast casserole together the day-of.If the name of this recipe has your mind bending, these are pancakes, made like a baked french toast. Did that make sense?
Don’t worry; you’ll see.
BLUEBERRY PANCAKE FRENCH TOAST BAKE
Serves 8-10
2 batches (15 individual)old fashioned pancakes
6 eggs
1 and 1/2 cups milk
1 cup heavy cream
1/2 cup sugar
1 tablespoon vanilla
1/2 cup flour
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup butter, sliced at room temperature
1 cup blueberries
Powdered sugar
Maple syrup
Slice pancakes in half. Arrange in baking dish in to rows with flat side down. Pour blueberries over pancakes. In a bowl, whisk together eggs, milk, heavy cream, sugar, and vanilla. Pour egg mixture overpancakes. Mash together flour, brown sugar, cinnamon, salt, and butter until a crumble forms. Sprinkle over pancakes.
Chill overnight, or for at least two hours. Preheat oven to 350 degrees and return pan to room temperature. Bake for 50-60 minutes. Allow to cool. Serve with powdered sugar & maple syrup.

I made this today ALL GLUTEN FREE and it was a complete hit! my daughters 19th Birthday ao we had the Grans over for brunch and I wanted something that I could semi prep the night before. I also made the candied bacon and fruit salad and very plain potato has browns and it was wonderful!

i accidentally bought what i thought was frozen waffles but were frozen pankcakes so gave them a try in this recipe. they lined up perfectly in a bread pan after cutting in half. i cut the egg and cream mixture in half and added an extra egg and lemon peel…instead of syrup or powder sugar for topping, i made a lemon icing drizzle…so pretty to serve and flavor was delicious…

Could this be put Into a 9×13 crockpot and for how long to cook? Was guessing 2-3 hours on low? What are your thoughts. I have a family brunch after a day long memorial and reception and thought I could assemble in the 9×13 crock, refrigerate, bring it to room temp as the Crocker heats….

This came out delicious! Could be served in a fine restaurant. The consistency of bread pudding. Definitely making this again! Definitely need to make it the night before and let the juices sink into the pancake. Yum!!

I just made this with commercial food service pancakes and frozen blueberries. It really transformed the the bland pancakes and best of all it looks so pretty. Followed directions as stated but forgot to let it come to room temp before I baked it in the morning. It was still AMAZING. Tastes good with or without syrup.

Well, I had leftover pancakes! They always seem so dry and horrible tasting the next day, so I am trying this! Except, I had silk oatmilk creamer with baking soda used 1 cup and 1 cup milk instead of heavy cream. It will be interesting! Thank you for sharing!

I have brunch for my family 4 or 5 times per year. I try to never make the same thing twice. I love to try new recipes on my family. WELL, this recipe is on the menu at EVERY brunch! They definitely stand United when it comes to keeping this recipe on the menu. It is DELICIOUS!

If you are making homemade pancakes. What size batch of pancake recipe do you use. My single recipe for pancakes is made with 2 cups of flour. You say2 batches, would this be a four cup recipe ?

I just made a Gluten free version of this with just replacing the regular pancakes for gluten free ones and using Gluten free flour for the topping. Great for a brunch. It came out AMAzING! Next time i think i will add bananas.

Curious about freezing the casserole before cooking, anyone tried this? Was wanting to space out our pancake consumption( double batch this morning to have leftovers for this) although I am sure no one would complain.

Just discovered this… Yum! My changes: a thin layer of blueberry cream cheese on the pancakes when assembling them in the pan so it’s between the layers. I also used lowfat vanilla yogurt in place of the heavy cream just because I had it on hand, and then I just cut the sugar and vanilla a little in the egg mixture. Thanks for the recipe!

To Annmarie: How long did you chill before baking? Maybe not long enough for the pancakes to absorb the wet ingredients. Just a thought . . .

i made this for breakfast in Christmas Day here in New Zealand. So easy to put together the night before. In the oven in the morning while we opened presents and omg so delicious! These were absolutely delicious. I served this at the ladies Sunday School breakfast and they loved them. I kicked it up another notch by serving along with the powdered sugar and maple syrup – blueberry syrup too. Needless to say everybody ask for the recipe. Thanks for posting!
