Ingredients

  • 10 large eggs
  • ½ tablespoon olive oil
  • ½ cup diced onion
  • 1 cup shredded hash brown potatoes, thawed
  • 1 cup diced red peppers
  • 1 tablespoon minced garlic
  • 1 cup cooked ground sausage
  • ½ cup cooked crumbled bacon
  • 1 ¼ cups shredded cheddar cheese
  • salt and pepper, to taste
  • 8 extreme wellness tortilla wraps (8 inch)

Instructions

  1. Scramble the eggs in a large skillet. When they are done, remove them from the pan and place them in a covered bowl.
  2. Saute the onion, hash brown potatoes, and red peppers in the olive oil for 2-3 minutes or until the potatoes are cooked.
  3. Stir in the garlic, sausage, bacon, scrambled eggs, and cheese. Season to taste with salt and pepper.

    These are really good for camping too! I wrapped each burrito in heavy duty aluminum foil before stuffing them into the plastic bags. Then into the cooler & we just threw them directly into the fire in the morning. Make sure to rotate & turn them so they don't burn. When they start to puff up, they're done. Everyone loved them!

    I also added a can of cream of mushroom soup to make them extra creamy inside.

      I think they would be fine to heat up in the oven. Maybe thaw them first, then heat until warmed through. I haven't done it this way, so I can't give you an exact time. Keep me posted on how it works for you!
