- Cilantroโ Fresh cilantro leaves, trimmed.
- Garlicโ Fresh garlic cloves will give the best flavor, but you can use jarred garlic in a pinch.
- Lime juiceโ Fresh squeezed is best, but you can use bottled pure lime juice if you donโt have any limes.
- Oilโ My strong preference for this recipe is a fragrant olive oil.
- Dried seasoningsโ Salt, pepper, sugar.

โญ First, combine cilantro, garlic, lime juice, olive oil, salt, pepper, sugar, and water in a blender and pulse until well combined.
โญ Then, taste and adjust as desired.
โญ Next, marinate your favorite meats in the refrigerator.
โญ Finally, cook marinated meat as desired. Discard and leftover marinade that came in contact with raw meat.

We like olive oil, the bolder the better! If you prefer something more mild, any vegetable oil will work.

This will keep in a sealed container in the refrigerator for up to a week or longer if frozen.

Yes, store in a freezer-safe air tight container, making sure to leave enough head room for expansion. It will keep indefinitely so long as it is continuously frozen.

How long to marinate chicken?
For chicken, youโll want to marinate it at a minimum for one hour. That said, you can marinate for as little as 30 minutes and as long as 24 hours. I find the sweet spot is between 4 โ 6 hours.
Any longer than 24 hours and the meat can break down too much and become mushy.

For steak, youโll want to marinate it at least three hours. That said, you can marinate for as little as 30 minutes and as long as 24 hours. I find the sweet spot for steak is between 6 โ 8 hours.

Fish and shrimp will be a much shorter marinating time, typically 30 โ 60 minutes. Longer than an hour and your the meat will begin to break down.
Variations

๐ฅ Use leftover marinade as a dressing or sauce by whisking it with sour cream or cream cheese. (Only use the remaining marinade that has NOT been in contact with raw meat).

Ingredients
- 1 cup fresh cilantro leaves loosely packed about 1 bunch
- 4 cloves garlic fresh peeled
- โ cup lime juice the juice of about 5 limes
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 teaspoon sugar
- 1 cup olive oil
- 1 cup water
Instructions
Combine cilantro, garlic, lime juice, olive oil, salt, pepper, and sugar, in a blender and pulse until well combined.
Pulse in water until desired flavor and consistency is reached. (Makes about 2 cups without water or 3 cups with water, pictured recipe includes full cup of water).
Store in the refrigerator or use immediately.
