Apart from the fact that you can easily find brisket cuts in the supermarket, the rest of the ingredients are probably already in your fridge. We’ve made this recipe simple and easy to follow, so there are no excuses!

Whether you’re using ready-to-cook corned beef, or cured your own brisket for this dish, rinse it several times. Since you cure briskets with salt to make corned beef, they are salty when cooked. Rinse them 4 to 5 times to make sure that you won’t end up with a too-salty dish. You also want to cook it under low heat for a couple of hours so you get tender slices of meat rather than tough ones.

How To Make Diner-Style Corned Beef Hash

No need to go to fancy restaurants to have your favorite corned beef hash. Here is a recipe to make it at home!

Ingredients

  • lb potatoes, (about 3 medium), cut into ½-inch cubes
  • 3 tbsp butter
  • ¾ cup celery, finely chopped
  • ¾ lb corned beef, cooked, cut into ½-inch cubes
  • tbsp spring onions, minced
  • ¼ tsp ground black pepper, to taste
  • 2 tbsp cilantro, fresh, minced

To Serve:

  • 2 eggs, cooked sunny-side up

For Garnish:

  • tsp spring onions, minced

Instructions

  1. Place the potatoes in a saucepan, then add water to cover. Bring to a boil.

  2. Reduce heat. Cook uncovered for 6 to 8 minutes just until tender, then drain.

  3. In a large nonstick skillet, heat the butter over medium-high heat. Add the celery and cook for 4 to 6 minutes until crisp-tender.

  4. Stir in the corned beef and cook for 1 to 2 minutes until heated through.

  5. Add the potatoes and cook for 6 to 8 minutes, turning occasionally, until lightly browned.

  6. Sprinkle the hash with cilantro, black pepper, and spring onions. Toss and stir to combine.

  7. Garnish with spring onions, then serve with eggs. Enjoy!

Recipe Notes

If you prefer bell peppers to be cooked, add them before putting the skillet in the oven, rather than adding them later. You can also use parsley instead.

For the potatoes, you want to boil it long enough that you can easily stick a fork in it. If not, you will have undercooked hash browns for breakfast.
