Ingredients used to make Greek Yogurt PB Fit Protein Bars

**I've linked some of these ingredients to amazon.com to give you an idea of what they are, but you should also be able to find them in your local grocery store (usually, the natural & organic food section). They are also affiliate links, which means that I earn a commission as an Amazon Associate if you decide to purchase the items. The price will be the same for you, link or no link 🙂

  • Protein Powder– My go-to protein powder is a vanilla plant-basedprotein powder, like this Orgain Protein Powder.
    • Notes on using other Protein Powders in this recipe: Most frothy protein-shake type powders like whey, casein, pea, hemp, brown rice, egg protein powders should give you similar results, but slightly different textures. (Whey tends to produce gummier protein bars, for example). Collagen Peptides protein powder DOES NOT work with this recipe, so I highly recommend that you stick with the recommended protein powders. For collagen protein bar posts, check out this collagen page instead.

  • Peanut Butter Powder - PB powder is made by removing most of the oil from roasted peanuts and grinding them into a fine powder, resulting in a low-fat, high-protein alternative to traditional peanut butter. You can use brands like PB Fit, or PB2. I used a Sugar Free PB FIt powder for this recipe

  • Greek Yogurt (or yogurt of choice) - Greek yogurt acts like a binder for this protein bar recipe and adds a hefty boost of protein, too! If you'd like to convert this recipe to a vegan-friendly one, you can simply use a vegan yogurt like coconut yogurt or almond milk yogurt. Note that you may need to add 1-2 Tbsp more of the peanut butter powder to make the protein bars since vegan yogurts are more watery compared to Greek yogurt.
  • Chocolate Chips - you can use any chocolate chips. To make these protein bars low-carb, use a lower sugar, stevia-sweetened brand

Next, add in the Greek yogurt, using your hands to knead and get the dough to combine together.

NOTE: Add more peanut butter powder if the dough is too soft, add more of Greek yogurt if the dough is too thick. TRY TO ADD A HALF-TABLESPOON AT A TIME! The final dough should be firm, but soft enough that you can roll the dough into a ball without it falling apart.

Recipe Variations and Optional Add Ins:

  • Feel free to experiment with natural flavoring / extracts. Add a teaspoon of vanilla extract (I didn't feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as lemon extract or raspberry extract

Just keep in mind that some extracts contain alcohol, and since this is a no-bake recipe, the alcohol won't have a chance to fully evaporate. If serving this to kids, or if you're sensitive to alcohol, be sure to use non-alcoholic extracts or flavorings. Here are some non-alcoholic brands, here: Non-alcoholic peppermint extract, non-alcoholic vanilla extract

How to Make this Healthier

  • Make this even healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed, hemp seeds, or chia seeds.

How to Store Greek Yogurt PB Fit Protein Bars

  • You can keep the protein bars out at room temperature for 1 day but for maximum freshness and best texture, it's best to store these protein bars covered in the fridge. They'll be fresh for up to 5-7 days.
  • These protein bars also freeze very well! Seal them inside an airtight container or Ziploc bag and freeze them in a single layer so that they don't stick together. I recommend double-bagging if you want to keep out the fridge smell. They can be frozen for up to 4 months.

Can I use double PB fit and no protein powder?
And you mentioned almond milk at the end of recipe, but it’s not in the actual recipe or list of ingredients…?

I was wondering the same thing about just using the PB fit and no protein powder.

The almond milk was a typo! It's been fixed now, thanks so much for bringing this to my attention! Regarding using PB Fit and no Protein Powder, I would use 1 cup of PB Fit for every 1/2 cup of Greek yogurt. If you're interested in what that might look like, here's my PB Fit Greek Yogurt Easter Eggs recipe that uses just those 2 ingredients.

I might be doing my math wrong, but when cut into 6 bars, each bar is around 175 calories, using the info from the link you provided and the amount.

Can I use unflavored protein powder instead of vanilla

    Reply

    • All Purpose Veggies says

Yes, absolutely! But the protein bars will be less sweet - I would taste test the dough before shaping and add 1-2 Tbsp of sugar of granulated sweetener of choice. Enjoy!

I ended up having to use a lot more Greek yogurt than 1/3 cup. The recipe as it is was very dry and crumbly. Eventually, I got a decent consistency, but it still seem to fall apart even after you freeze it overnight.

The bars are tasty, but a little bit too dry. Feels like I need a glass of milk to drink this with.

Hi Jessica, thanks for making and sharing your thoughts on these PB Fit Protein Bars! Sorry they were a bit dry. The consistency sometimes varies depending on how packed the PB powder is. Different brands of Greek yogurt can affect the texture, too. I'm glad you still thought they were tasty, thank you!

Yes, you can definitely use chocolate protein powder instead of vanilla in the Greek Yogurt PB Fit Protein Bars recipe. It will give a delicious chocolatey flavor to the bars. Enjoy!

Have you tried using regular peanut butter instead of powdered?

    Reply

    • All Purpose Veggies says

Hi Reg, I haven't tried using regular peanut butter in this recipe, but I don't think it would work the same way as the powdered kind since regular peanut butter has a different consistency and moisture content, which could affect the texture and overall outcome of the recipe. If you do decide to experiment with it, I'd love to hear how it turns out for you!

I used whey protein and the result with the given measurements was very sticky. Do you recommend adding more powder until the result is more crumbly?

    Reply

    • All Purpose Veggies says

Hi Jess, using whey protein can result in a different texture. I would actually recommend adding more peanut butter powder to control the stickiness until you reach the desired consistency. Thanks for trying the recipe!

Definitely not what I expected, mixture was so dry, ended up adding a lot more Greek yogurt. The consistency after mixing was never “just right” flavor was sub par. This was a complete waste of ingredients and I had such high hope as it seemed so simple and easy.

Hi Jessica, I'm sorry to hear the recipe didn't meet your expectations. Sometimes the type of protein powder can affect the consistency, but I still appreciate your feedback and will look into revisiting the recipe to see if there's improvements that can be made. Thank you for giving it a try and coming back to share your experience!

I agree. I’m so upset I wasted all that powdered peanut butter for a nasty mush I could never get right texture or taste wise. Do not recommend.

Finally threw it away instead of continuing to waste ingredients trying to get a good consistency. It was like glue. I must have been doing something wrong.

Great ingredients but like many other people mine was way too dry and I had to add a lot more yogurt. Once set, they were very dry and not very good. I will eat them but my husband made a face when he ate one.

As other people mentioned it was a waste of ingredients. Although mine was not dry, it was very sticky like glue as mentioned before earlier and I had to keep adding more powder so it was just a waste of ingredients

I made these and I really liked how easy, healthy and delicious they are. I did however add organic honey to the mix. Unlike other comments, my recipe did not turn out dry at all. The consistency was perfect and turned out just as you said. Thank you!
