Whether you want an incredible breakfast that even the fussiest eaters will love or just want something that can be made ahead and then used as a grab and go breakfast, this recipe for pancake sausage on a stick is exactly what you need.
Similar to a corndog in design, this is a cooked sausage link that is then covered in pancake batter and fried to perfection. With so many ways to enjoy this breakfast, combine some fresh fruit and a glass of milk for a great morning start.
How to Cook Sausage Links
Since these do not fry for very long, since the pancake batter cooks fast, the sausage needs to be cooked before dipping it in the batter.
There are several ways to cook sausage links for this recipe. I prefer to cook my sausage in a skillet. I brown the sausage and cook to an internal temperature of 160 degrees.
Others like to bake their sausage, much like baking bacon. If you choose to bake the sausage, preheat the oven to 350 degrees and bake for 10 minutes. Flip the sausage over and bake for another 5 minutes.
No matter how the sausage is cooked, set it aside once it is cooked while preparing the pancake batter.
What Kind of Pancake Mix is Best for Pancakes
I am making my pancake mix from scratch. There is nothing better than homemade from scratch pancakes. I highly recommend making the pancake batter using this recipe, however, if you are in a hurry or in a bind, you can use whatever kind of pancake mix you have.
How to Serve Pancakes on a Stick
I like to serve my sausage and pancake skewers with a lite dusting of powdered sugar and some syrup on the side. Dip the skewer before each bite.
Another option is to use a chocolate syrup, thinned hazelnut spread, like Nutella, or a fruit flavored syrup or thinned jelly. Whatever you like on your pancakes will work great on these pancakes on a stick.
Can you freeze Pancakes and Sausage on-a-stick
I love to freeze these sausage stick with pancakes. It makes an incredibly easy freezer breakfast that can be heated up easily. Make a large batch of these and let them cool completely. Lay the pancake sausage sticks on a baking sheet and freeze them until they are frozen through. Once frozen, move the pancake sausage sticks to a freezer bag or air tight container. This grab and go breakfast will last for about 2 months.
How to Reheat Frozen Pancakes and Sausage
These pancake sausage sticks are easy to reheat. Wrap the frozen skewer in a paper towel and heat them in the microwave for 1 to 2 minutes. You can also heat them in the oven for 5 to 10 minutes or until heated through.

- All purpose flour
- Baking powder
- Sugar
- Salt
- Milk
- Egg
- Butter
- Vanilla extract
- Maple syrup
- Breakfast sausage links
- Canola oil
- Small wooden skewers

How to make Pancake Sausage on a Stick
- In a large skillet, cook sausage links until done (internal temperature of 160°). Place on a plate lined with paper towels. Set aside.
- In a large bowl, whisk flour, sugar, baking powder and salt together until combined.
- In a small bowl, combine milk, egg, vanilla, and slightly melted butter.
- Pour the wet ingredients into the dry mixture and stir until combined (batter will be slightly lumpy).
- Add in maple syrup and stir to combine.
- Preheat oil in a tall saucepan over medium high heat.
- Pour pancake batter into a tall cup.
- Insert wooden skewers into the end of cooked sausage links and one-by-one dip the sausages into the pancake batter to coat.
- Place the pancake batter coated sausage links into the hot oil and cook until batter is golden brown in color.
- Remove from oil and let cool for a minute before serving.

- 14 breakfast sausage links
- 1 cup all purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup milk
- 1 egg, slightly beaten
- 2 tbsp butter, slightly melted

- 1 tbsp maple syrup, plus more for dipping
- canola oil, for deep frying

Carefully place the pancake batter coated sausage links into the hot oil and cook until the batter is golden brown in color (45 seconds to one minute).
Remove from oil and let cool for a minute or two before serving.
