We had a delicious fried cauliflower appetizer at a local restaurant, Kermit’s Outlaw Kitchen (KOK), recently. It was so good, I wanted it as my meal not just as a starter. I knew I wanted to try this cauliflower at home.
There are a few differences in my Panko Baked Cauliflower Bites and KOK’s. First, I baked where as they fried the bites. I just refuse to fry. I served my cauliflower with a yogurt sriracha sauce and KOK served theirs with a peanut sauce. I’ve been a little sriracha crazy lately so that was on my mind. Also, I actually forgot they had a peanut sauce. So there’s that…
These gems are easy to prep, the oven does all the work. You just get to enjoy the crunchy texture and heat from the sriracha!

Panko Baked Cauliflower Bites Tips
- Choose a head of cauliflower that is firm and tightly closed
- Cut the head into evenpieces
- I used panko breadcrumbs in this recipe, you can also use regular breadcrumbs or crushed crackers.
- Test for doneness with a fork, if it pierces easily the cauliflower is done, if not allow them to cook another 5 minutes before testing again.
- Not a fan of the Sriracha Dipping sauce, use the peanut butter sauce in this recipe.

Ingredients
- 1 head cauliflower cut into bite sizes
- 1 cup panko bread crumbs
- 1 cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs beaten
Instructions
Heat oven to 450 degrees F. Line a sheet tray with parchment paper or aluminum foil.
Wash cauliflower and pat dry. Cut into pieces.
Add panko to a small bowl.
Add flour, salt, and pepper to another small bowl and stir together.
Add 2 eggs to another small bowl and beat.
You now have 3 bowls with the flour, the egg mixture, and the panko.
Use the stem of cauliflower to hold, dip the floret first in the flour, then into the egg and finally into the panko.
Place on a sheet tray so that they're not touching.
Repeat process with all the cauliflower.
Bake at 450 degrees 30 minutes.
Meanwhile, mix sauce. Mix hot sauce, yogurt and honey until smooth

For a whole head of cauliflower I needed 3 eggs, about 2+ cups of panko and only about a half of a cup of flour.Reply
Same here! Also: mixed in some canned parmesan with the panko, and a little cayenne with the flour.
