However, zucchini does have some benefit to baked goods such as this bread.
Not only does zucchini add some nutrients, flavor, and a bit of texture, it also is a good source for moisture.

How do you prepare zucchini for baking?

In this recipe, the zucchini needs to be grated in order to get it to a good size for blending with other ingredients. Once the zucchini is grated into smaller pieces, it can be evenly distributed which will help this bread bake more evenly.

To prepare the zucchini, you can first peel it or wash the skin well. Remove the ends if you are using a food processor or grating by hand. If you are using a spiralizer then follow the directions provided.

  • Vanilla Extract. Added for flavor balance.
  • Chopped Nuts. This is an optional ingredient but, it really does add a lot to this recipe. Chopped walnuts and/or chopped pecans work well in this recipe. You can use additional chopped nuts for the topping as desired.

Expert Tip 👉 Make this recipe low carbohydrate by using a low carbohydrate all purpose flour. You can make this recipe gluten free by using a gluten free all purpose flour. Almond flour will most likely need an additional egg. Lastly, for best results, use an all purpose flour alternative that measures like all purpose flour.

Prep Time: 10 minutes.
Bake Time: 50-55 minutes.

  1. Preheat your oven to 325 and prep a loaf pan well for nonstick. I like to use parchment paper that overhangs the sided of the pan and is lightly dusted with flour or sprayed with nonstick.
  2. Grate your zucchini using the method of your choice. Then place the zucchini of a clean kitchen towel or stack of paper towels to drain the excess water while you work.
  3. In a medium mixing bowl, use a whisk to combine the flour, ground cinnamon, baking powder, baking soda, and salt.
  4. Next, in a large mixing bowl, use a clean whisk to combine together the sugar alternative, oil, eggs, and vanilla extract. Once they ingredients have been combined you can use a rubber spatula to fold in the grated zucchini.
  5. Add the dry ingredients from the first mixing bowl to the large mixing bowl with the wet ingredients and mix until just combined. Then fold in the chopped nuts.
  6. Bake this bread in the center of your oven for 50-55 minutes or until the bread begins to turn brown and a toothpick comes out clean.
  7. Lastly, allow the bread to cool in the pan for at ten minutes before transferring to a wire rack to fully cool.


Expert Tip 👉 Carefully unmold this bread from the pan before transferring it to a wire rack to fully cool. To do so, you can slide a knife around the edges of the bread to unstick it from the sides.

How to make Sugar Free Homemade Zucchini Bread

  • Preheat your oven to 325 and prep a loaf pan(s) for nonstick. I am a fan of parchment paper(think easy lift out).
  • In a medium sized bowl, whisk together your flour, baking soda, nutmeg, and cinnamon. Set this bowl aside.
  • Now in a mixing bowl blend together your sugar alternative and oil. The add the beaten eggs and vanilla extract.
  • For the next step, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. Do not over-mix.Then you can fold in the grated zucchini and optional chopped nuts/raisins.
  • Bake your bread in the center of your oven for 45-50 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan. Baking time can vary depending on how many loaf pans you are using and how thick your bread is.
